A small cottage business baking traditional and sourdough breads and pastry.

Previously I owned North Shore Coffee Company, est. 1992, where I worked as a professional baker. I now have returned to my baking roots as Hackel Haus Bakery.

Good ingredients make great pastry.

My focus is on using local stone milled Midwest grains which provide more flavorful and nutritious loaves, danish, scones and sweet rolls. Supporting local small business using free-range eggs, seasonal fresh fruits from nearby orchards and honey from Cannon Falls.
